I'm not too sure what kind of remedies you all need right now so I'm going to share my favorite I-don't-know-what-to-cook recipe for brown rice and lentil casserole. At my house, we call it Brice Cazzerole. This easy, flexible recipe can usually be changed and made with whatever you have in the pantry, of course having fresh ingredients is always a bonus.

Brice Cazzerole
- 3 cups of soup stock or hot water
- 3/4 cups green/brown lentils
- 1/2 cup brown rice
- some onion - 1.5 tbsp dried or 1/4 medium fresh onion chopped
- some garlic - 1 tsp powder or a couple fresh cloves chopped
- 1/2 tbsp Italian seasoning and/or your favorite fresh herbs
- pinch of salt
- bake in oven 350 in large casserole dish with lid on for about 40-50 min and remove lid, bake about another 10 min with lid off.
- your lentils and rice should be cooked but the cazzerole should not be soupy, if watery leave in oven longer or let sit with lid on
- you can cover with shredded cheese if you like, I never have
- if you don't love this casserole, you're not doing it right, just kidding!
- if you don't love this casserole, try adding more salt and/or pepper, and do things a little different next time
Fun Substitutions
- try quinoa or white basmati rice instead of brown rice
- try using some red lentils, they are softer and a pretty color
- try using curry powder and/or chilli powder instead of Italian seasoning
- try adding other chopped fresh veggies, like shallots, peas or peppers, mix in kale after you pull the casserole out of the oven, cover with lid and let the heat of the food cook the kale
- try adding mushroom gravy powder - this is a real vegan food - make sure you add a little extra water
- try using coconut milk instead of soup stock, Mmmmm, coconut milk
- try adding any seasoning or superfood you have on hand, add seeds like hemp or sesame after cooking
- try using leftovers as filling in wraps, I like big pieces of lettuce as wraps
